摘要:
对于食品而言,质量信息通过相关标准在企业-企业、食品企业-公众之间传递,影响食品企业的质量供给决策以及消费者的消费偏好和购买决策。在经济人假设前提下,食品企业追求利润最大化时,现阶段还需通过提供高质量安全食品来满足消费者质量需求。食品企业之间质量安全信息的不完全公开造成了质量产出水平低效。同时,食品企业质量水平随着企业规模、相应消费者质量需求的不同而不同。针对这一状况进行经济学分析,观察均衡点随着信息公开的变化情况,寻找影响食品企业质量安全信息公开的行为成本、收益因素,结果发现,监管部门的标准化规制是提高食品企业质量水平、降低交易成本、平衡食品企业质量供给与消费者质量需求的有效手段。最后从信息需求侧角度提出政策建议,为削弱食品市场的信息不对称性、提高信息不对称环境下的信号质量作出了有意义的探索。
